Maple Syrup Time at Boyle Park

When spring arrives we tap the maple tree and create maple syrup. The taps are typically set weeks before so that when the sap runs they are ready.

We tap several trees around the yard, including this one outside our window.
The conditions are ideal this morning. The sun is shining brightly and there was hard frost overnight.
We collect in carboys left from our winemaking days. We empty them into a 75l plastic container. We then boil the sap to reduce it to syrup. 40 litres of sap produces approximately 1 litre of syrup.
The campfire burns during daytime hours for many days.

We do the final boiling inside on the kitchen stove.
